  4. What’s the difference between the Thermapen Mk4 and the Classic Thermapen besides battery life? Thank you!

      There are quite a few differences. Yes, battery life, but also battery type. The Classic uses a coin-cell battery while the Mk4 uses one AAA battery. The Mk4 has a rotating display that allows you to read the temperature from any angle (and is great for left-handed people), and it has an automatic backlight that senses lighting conditions to turn on or off. It has a greater waterproof rating and has an improved auto-on/off function that puts it to sleep and wakes it up when you pick it up.
      I hope that helps you make your choice! They’re both great thermometers, both accurate and fast, but the user experience for the MK4 is truly remarkable.

  5. Great series! It’s got me wanting to go out, buy some meat, and get smoking.

    Your remark on competitions struck a chord with me. I’m a homebrewer and have recently submitted some brews for judging. My beers are getting low marks because they do not match the rubric of what the style is supposed to be. Even though they are kick-ass brews!

    So, think twice about competitions. They aren’t necessarily about creating the tastiest thing you can. They’re more about matching someone else’s idea of what your food should taste like.

      Absolutely! Make what’s great for you if you want to, but if you go compete, you have to make what’s great to someone else!

  6. My husband and I are such foodies and since we got a nice grill, we want some BBQ tips! I didn’t know wet rubs weren’t good for brisket, butt, or ribs because those all cook longer. I’ll have to show my husband my article and we can look for rubs and sauces that would make our BBQ that much better, thanks to this post!
