  1. One question: What’s the recommended cooking temperature for this recipe? The only grill temps you mention refer to greasing the grill (400-450 F and 500-700 F — that’s a pretty wide range!).

    Thanks!

  2. Key ingredient missing from Avocado Cream Sauce ingredient list – Avocado! Should we assume it is one avocado?

    1. Actually, I used half an avocado in the cream sauce and the other half for garnish on the tacos themselves. Thanks!

  3. Sounds wonderful, and I’m guessing that one ripe avocado should be included in the sauce ingredients, at least it looks that way in the photo…..

  4. Are the tortillas fresh made or store bought?
    Please provide the info be:
    If fresh made, include recipe.
If store bought, what is the tortillas name/manufacturer?

Thank you for offering these wonderful recipes.

    1. Sa,

The tortillas we used were store bought. I do not know the brand name, but any good tortilla will do. Tortillas are actually a surprisingly local food, with small production factories all over the country, so goo tortillas are easy to get but recommending a brand is hard to do, as there are so many small brands around the country. I recommend going to your local Latin market and just buying whatever tortillas they have stocked in large quantities.

  5. Hi Tim. Thank you for excellent article and recipe. ThermoWorks has always been a Top Source for information !

The practice of directly oiling grill grates to prevent food from sticking has been largely debunked by grilling experts + enthusiasts.
While oiling grill can help with preventing sticking, it’s more effective + safer to apply oil directly to food or to use a grill spray specifically formulated for no-stick grilling.
