Fried catfish fillets

    1. It need only be a bit more than a half-inch deep, and it certainly can be strained and then reused. But I would only reuse it for more fish, as it tends to pick up the flavor of the fish. It’s no good for donuts after that!

    2. Great comment. Great article, and wonderful recipe. Use the leftover cornmeal mixture in hush puppy recipe, adding minced onion, and use the leftover oil to fry them in. Waste not, want not;)! Drain filets and hush puppies on crumpled brown paper bags. Better to keep them crisp than paper towels. Works on fried chicken, too. And don’t forget to season with salt immediately after removing from hot oil. Making Chef Martins catfish recipe, with hush puppies and Cole slaw this weekend.






  1. “Man, I couldn’t eat all the fried catfish I could eat for dinner, if’n I started before breakfast!” Slaw, hushpuppies, and sweet tea makes one of the finest meals ever.

    Used to be in the days of yore, here in Georgia, there were a few restaurants that specialized in such fare. Catfish King and the Rio Vista were two of note in our neck of the woods. All you could eat for $1.29/person or some such price back in the 1950s when gasoline was 27¢/gallon.

    If and when this pandemic ever ends and we get out to restaurants again and I see catfish on the menu, you bet that’ll be my order.

    With this excellent article, however, Martin Earl has done it again. Now I am going to look for catfish filets and fry up a mess of catfish at home. I’ve got buttermilk and corn meal (naturally), oil, a cast iron fry pan, a Thermopen and a ChefAlarm. All I need is the catfish. Chef Earl, you’ve inspired me to get ‘er done.

  2. All this info and you choose to say……High smoke-point, neutral-flavored oil for frying…..instead of the exact name or type….so basically its trial and error for us rookies.

      1. Actually Coconut oil in a deep fryer at 330 degrees with a beer batter is my preferred method !
