  1. Pulled pork works really well also. When I smoke pork, I’ll overbuy by far, and vacuum seal 1# bags of pulled pork to go in the freezer. A quick defrost and they work beautifully in nachos.

    This would work well with leftover brisket that ends up in the freezer as well.

    While I’m sure it’s better with a fresh cooked brisket, nachos are a perfect application for frozen leftovers.

  3. I used to make Nachos with plain shredded cheese. Spread grated cheese on a pile of chips then heat till melted. Hated it. Hated the texture. Enter canned Nacho Cheese. Heat up chips add POURABLE hot cheese and toppings and Voila. I will say though your version of Cheese sauce looks great and Ima give it a go.
