  1. Made yearly since 2008, then bought the TW3628 in 2010 with perfect results. Try using peppermint instead of vanilla for variety. My recipe has less sugar (2 1/2 cups and 3/4 water), then add syrup to stiff egg whites to precisely 262 degrees. Add 1 teaspoon of gelatin while mixing. Spoon onto parchment or pour batch into 8×8 lined pan. Add nuts and maraschino cherries alternate years.

    1. The temps remain the same, no matter the batch size. But be sure to use a big enough pot, the boiling sugar gets big.
