What Temperature to Fry Chicken?
Whether you’re frying chicken, doughnuts, or french fries, monitoring your frying oil temperature is key to achieve perfect results. Here are a few temperature tips so you know what oil temperature to fry chicken in as well as what internal temperature you should target while frying chicken.
Oil Temperature for Frying Chicken:
Pre-heat the oil to 350ºF. This will ensure that when you place the chicken in the oil, it won’t lower the temperature below the desired frying temperature. While the chicken is frying, adjust the heat to maintain 325ºF in the oil. Use a leave-in probe thermometer, like the ThermaQ®, to monitor the temperature through this process.
Internal Temperature of Fried Chicken:
Use an instant-read thermometer, like the Thermapen®, to check the internal temperature of the chicken. Once the temperature reaches 157ºF remove the chicken from the oil, it will rise to 165ºF while it is resting.
