  1. Safe to say this makes 4 servings? The only place it mentions “servings” is under the “To Serve” ingredients for the noodle instructions…

    1. I think you can get 4 servings out of it, yes, but they will not be the huge bowlfuls you get at many pho restaurants. Doubling the broth recipe wouldn’t be hard, and any extra broth would freeze perfectly.

  2. I am a great fan of Kenji López-Alt, but I take a single exception to his suggestion of putting unboned chicken in a food processor. Following his instructions to do so in another recipe, I ruined a set of Cuisinart blades. I now use a cleaver on a stout cutting board to achieve almost the same pulverization without destroying equipment.
