Instructions
Preheat your grill with one layer of charcoal or high gas. It should be quite hot!
Pick over your chicken thighs looking for bone fragments or other little bits that won't be fun to eat. Toss the chicken with the oil and more or less seasoning to coat them.
Lay the chicken out on the grill over the coals. Cook for a few minutes, then flip. Continue cooking and flipping, moving pieces in and out of hot or cool spots to achieve all-over grill flavor.
As the chicken starts to look cooked, start taking the temperature with your Thermapen ONE. The chicken is done when no part of it is cooler than 175°F (79°C).
As the chicken pieces come to temp, remove them to a plate or a cool part of the grill.
Serve them whole or sliced, as a main or a topping for something else. Enjoy!
